DR Congo has a long coffee history, interrupted by war and instability. Today, the Kivu regions (North and South) and Ituri produce interesting specialty coffees. Cooperatives with international support have renewed the infrastructure, and the aromatic profile — fruity, sweet, complex — is gaining recognition.
