Mexico produces mild, organic-friendly coffees with a sweet profile and moderate acidity. Chiapas (south, on the Guatemala border) is the largest region, followed by Oaxaca and Veracruz. Many coffees are certified organic and fair-trade. Indigenous Maya cooperatives play an important role.
